BEEF SOUP WITH CABBAGE AND RICE 
3 pt. water
1 lb. beef
1 lg. cabbage
Salt to taste
Pepper to taste
2 oz. rice

Pour boiling water over beef and simmer for about 3 hours. Add only boiling water during cooking so that it does not go off the boil. Then strain soup, cut meat into small pieces and return to pan. Season and add finely shredded cabbage and rice. Boil for about 5 minutes uncovered to allow pungent cabbage smell to escape.
