SPINACH STUFFED TOMATOES 
2 pkgs. frozen spinach
2 oz. cream cheese
1 tbsp. butter
1/2 tsp. dried onion
4 lg. or 6 med. tomatoes
Parmesan cheese for garnish

Preheat oven to 350 degrees. Cook spinach, drain well. Butter and toss with cream cheese and onion. Take tops off of tomatoes and scoop out pulp. Salt and pepper the tomatoes. Fill with spinach mixture. Sprinkle with Parmesan cheese. Bake 15 to 20 minutes.
