ITALIAN SPINACH STUFFED TOMATOES 
1 c. water
2 tbsp. butter
1/2 tsp. salt
1/2 tsp. oregano leaves
1 1/2 Hungry Jack mashed potatoes
1/2 c. milk
1 egg
9 oz. frozen chopped spinach
2-3 tomatoes, slices

In medium saucepan combine water, butter, salt and oregano; bring to boil. Remove from heat. Add potato flakes, milk and egg; mix well. Fold spinach into potatoes until thoroughly combined.

Place tomato slices in bottom of pan (13 x 9 inches). Mound cup potatoes and spinach mixture onto each tomato slice and sprinkle with cheese. Broil 4-5 minutes until cheese is browned.
