ZESTY MARINATED SALMON AND
VEGETABLE SALAD
 
1 1/2 lb. thick sliced salmon steaks, cut into bite sized pieces & poached
1 lg. or 2 sm. leeks
2 c. Chinese pea pods
1 c. red pepper strips, trimmed & cut in half, wash & cook until tender

Marinate hot salmon and leeks in herbed dressing at least 1 hour. Remove salmon and leeks from dressing. Toss pea pods and pepper strips in dressing. Gently toss together salmon, leeks, pea pods, and peppers. Serve with reserved dressing on a bed of lettuce.

Dressing:
1/2 c. olive oil
1/4 c. white wine vinegar
1 tbsp. lemon juice
1 tsp. dry mustard
1/4 tsp. crushed basil
Salt
Pepper

Combine and mix well.
