10 MINUTE NEVER FAIL MICROWAVE
PEANUT BRITTLE

1 cup sugar
1/2 cup light corn syrup
1 cup raw peanuts
1/8 tsp. salt
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda
Combine first 4 ingredients in 2-quart microwave mixing bowl. Microwave on HIGH for 8 minutes, stirring after 4 minutes. Add butter. Microwave on HIGH 2 minutes. Brittle should not get too brown. Stir in vanilla and baking soda until light and foamy.

Spread on buttered baking sheet as thinly as possible. Cool. Break into pieces.

To get nice even squares, pour into a buttered silicone mold with squares.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Awesome recipe I tried it with macadamia nuts. I guess any nut goes, every one loved it. I used clear plastic wrap sprayed non-stick, cooled and peeled of easy. Great recipe.

This is an awesome recipe. I did the 6 minute, 2 minute and it came out perfect. But, how the heck do I clean it out of my glass dish? It is STUCK!

 Faye (Nebraska) replies:
Cleaning the bowl is pretty easy if you have some time to just let it soak. Fill the bowl to the top with hot soapy water and then drape a strip of paper towel over the edge any place the brittle is above or outside the water. Wet the whole strip and put one end in the water and the other one patted against the bowl. Capillary action will keep the towel wet as long as the one end is in the water and the clumps of brittle under it will just dissolve away.

So excited had this recipe years ago and lost the book it was in during a move. So glad to get it back, sort of like a long lost friend returning.

This is the first time I attempted to make peanut brittle. I followed what one reviewer did and cooked the first 4 ingredients for 6 minutes at 80% power, stirred, added the butter and vanilla and cooked 2 minutes at 80% power and then added the soda. It resulted in a much too soft "brittle". My husband suggested putting it in the oven. I thought what have I got to lose, so I baked it at 350 degrees for 12 minutes and it came out GREAT! It spread out nicely in the pan (which I had placed buttered aluminum foil on). After it cooled it was crispy and airy - we couldn't stop eating it. So if you do undercook your brittle, try salvaging it by putting it in the oven.

Made as per recipe but adjusted cooking time for 1200 watt microwave. Used the 3 min, 2 min, 1 min that another reviewer suggested and it came out great. Also used parchment on baking sheet for easy cleanup.

Easy and tasty! Made it the second time using pecans and pine nuts for a birthday gift. I'm at 4200 ft. elevation, so cut the time to 3 1/2 minutes before the stir, 3 1/2 minutes after the stir, and 1 1/2 minutes after the butter.

Here's a trick. Before putting the mix in the microwave, take a spatula and break up the peanuts as much as you can without breaking too many. It won't REALLY matter but this will help give you more nuts in each piece per bite. The last batch my wife and I made, we found that the peanuts were too spread out. I tried it this new way and the results were great. The six minute cook time seems to be the way to go also.

The quickest way to cool the peanut brittle, especially in the winter months, is to put it outdoors in the barbecue and close the lid. This keeps anything from getting into it and it cools in no time at all.

 Brenda Casey (United States) says:
This is the perfect peanut brittle, I shortened cook time to total of 8 min, more powerful microwave. I used to stand at the stove forever stirring. NO MORE! this replaces my other recipe. Helps to spray spoon and bowl with non stick, for easier cleanup and have ingredients in condiment cups. warming the buttered pan sure makes it spread with no problem. then i set it outside to cool. Ready to eat up in no time.

Just tried this recipe. I have 1100 watt microwave and 6 minutes is the magic number plus using 1 1/2 tsp. baking soda. I sprayed my cookie sheet with cooking spray and it worked beautifully. Also sprayed the spoons I used. Will use this recipe again and again. Thank you.

I cut the time down to 3 min. 3 min. and 2 min. It gets way to brown when you cook it 10 min. It also has a burnt flavor
