POTATOES A LA COUNTRY 
2 lbs. potatoes, approx. 4 c.
1/2 c. finely chopped onion
1 clove garlic, peeled
Salt to taste (opt.)
6 tbsp. butter plus butter for greasing dish
Pepper to taste
1/8 tsp. nutmeg
2 tbsp. finely chopped parsley (fresh or dried)
3 tbsp. Parmesan cheese

Peel and quarter potatoes. Place in large saucepan and cover with water. Add onions and garlic and salt. Cook for 15 minutes. Drain and return to pan. Add salt, 4 tablespoons butter, pepper, nutmeg and parsley. Mash to a smooth consistency. Spoon mixture into buttered baking dish (6 1/2" x 11 1/2") and smooth over. Sprinkle with Parmesan cheese and dot with remaining 2 tablespoons butter. Preheat broiler. Place potatoes under broiler for 6 to 8 minutes until golden brown and bubbly. Serves 4.
