PECAN FRUIT CAKE 
1 lb. (4 c.) pecans
1/2 lb. (1 c.) candied cherries
1/2 lb. (1 c.) candied pineapple
3/4 c. plain flour
3/4 c. sugar
1/2 tsp. baking powder
1/2 tsp. salt
3 eggs, beaten
1 tsp. vanilla

Combine fruits and nuts. Sift flour, sugar, baking powder and salt. Add to nuts and fruit. Toss with hands to coat evenly. Beat eggs and vanilla, pour over fruit mixture and mix thoroughly. Will be very stiff. Press into a 9 x 5 x 3 inch loaf pan lined with brown paper well greased on both sides. Bake in preheated oven at 300 degrees approximately 45 minutes. Cool and wrap in foil and refrigerate.
