BREAST OF CHICKEN SCALA 
3 whole chicken breasts (boned & halved)
2 tbsp. plain flour
1/4 c. butter
1 can condensed beef consomme, undiluted
1/2 c. sour cream
1 tsp. salt
1/4 tsp. pepper
1 tbsp. grated Parmesan cheese

Dredge chicken with flour and saute in hot butter until brown. Takes about 15 minutes on medium heat in all. Add consomme and simmer uncovered about 45 minutes. Stir in sour cream, salt and pepper. Simmer 10 minutes longer. Remove chicken breasts to oven proof serving dish. Stir sauce in pan to mix well and pour over chicken. To serve sprinkle cheese on top and put under broiler until golden brown.
