CHICKEN BREASTS AMBROSIA | |
1 1/4 lb. boneless chicken breasts 1/2 c. orange juice 1 tsp. grated orange peel 1/2 c. crushed pineapple, drained 1/2 c. plain yogurt 1/2 tsp. salt 1/4 tsp. ginger 2 tbsp. toasted flaked coconut Spray large skillet with Pam. Brown chicken skillet 3-4 minutes per side, remove, set aside. In same skillet, cook orange juice and peel until reduced to 2 tablespoons. Reduce heat to low, stir in pineapple, add next 3 ingredients. Return chicken to skillet, heat 2 to 3 minutes. Garnish with coconut. |
