BEEF ENCHILADAS 
1 1/2 lbs. ground beef
2 lg. onions, chopped
2 cans enchilada sauce
Hot pepper to taste
Grated Cheddar cheese
Salt and pepper to taste
12 tortillas

Brown ground beef, add onions, 1 can enchilada sauce, hot peppers (chopped) and seasonings. Simmer about 30 minutes. Cover each tortilla with mixture, roll and fasten with toothpicks. Place side by side in pan and pour remaining can of sauce over all. Sprinkle with grated cheese. Place in 350 degree oven until cheese melts. Serves 6 or 7.
