BEEF AND BEAN ENCHILADAS 
1 1/2 lb. ground beef
1 med. onion, chopped
1 can (16 oz.) refried beans
3/4 tsp. salt
1/8 tsp. garlic salt
1/3 c. taco sauce
1 pkg. enchilada sauce mix, prepared according to instructions
12 corn tortillas
2 c. shredded cheese (yellow or white)

Brown beef and onion. Drain. Stir in beans, salt, garlic salt and taco sauce. Heat. Meanwhile, soften tortillas in moist towel in a microwave or by dipping in hot oil. Pour half the enchilada sauce into a 9 x 13 inch baking dish. Place about 1/3 cup of the meat mixture on each tortilla and roll to enclose filling. Place seam side down, in prepared baking dish.

Pour remaining enchilada sauce over tortillas. Cover with cheese. Bake uncovered at 350 degrees for 15 minutes or until bubbly hot.

Since microwave ovens vary in power, you may need to adjust your cooking time.
