BEEF ENCHILADAS 
1 1/2 c. ground beef, cooked
1 1/2 c. sharp Cheddar cheese, shredded
1/2 c. onion, chopped
1 can cream of mushroom soup
1 can tomato soup
1 can Old El Paso mild enchilada sauce
12 tortillas

Combine beef, 1/2 cup cheese and onion; set aside. Combine soups and enchilada sauce. Dip tortillas in hot oil to soften, a few seconds on each side. Top each tortilla with one heaping tablespoon of meat mixture; roll up. Place seam side down in 13 x 9 inch baking dish. Pour sauce over and top with remaining cheese. Bake at 350 degrees for 25 to 30 minutes. Makes 6 servings.
