CURRIED CHICKEN SALAD 
2 c. diced cooked chicken breast
4-6 green onions, sliced
1 c. sliced water chestnuts
2 c. cooked rice
3/4 c. seedless red grapes
1 c. chopped celery
1 c. mayonnaise
1/2 c. yogurt
2 tsp. curry powder or to taste
Salt and pepper to taste

Combine chicken, green onions, water chestnuts, rice, grapes and celery in a bowl. In a separate bowl combine mayonnaise, yogurt and curry powder. Mix well. Combine dressing with other ingredients. Mix thoroughly and chill. Serve with side dishes of plumped raisins, green and/or red peppers, chutney (we like peach), chopped red onions, chopped sweet gherkins.
