CURRIED CHICKEN SALAD 
4 (3 oz.) chicken breasts, skinless
1 tbsp. onion, minced
1 oz. celery, minced
1 tbsp. mayonnaise
Dash of curry powder
1/2 head Romaine lettuce

Steam chicken for 20 minutes. Remove and chill. Cut into a medium dice. Combine onion and celery with mayonnaise and curry powder. Add chicken; mix well. Place shredded Romaine lettuce on each plate. Add 3 ounce portions of salad; garnish and serve. 4 servings.
