CURRIED CHICKEN SALAD 
3 c. cubed, cooked chicken
1 c. celery, diced
1 tart apple, diced
1 can (11 oz.) mandarin oranges
1/2 c. finely chopped macadamia nuts or slivered almonds
1 c. mayonnaise
2 tsp. curry powder
1 tsp. salt
1/4 c. crumbled blue cheese

Combine chicken, celery, apple, mandarin oranges and nuts. Stir together mayonnaise, curry powder and salt. Toss with chicken mixture. Sprinkle blue cheese over top. Chill and serve.
