MAMA'S CORN FRITTERS 
1/2 c. all-purpose flour
3/4 tsp. baking powder
1/4 tsp. salt
2 tsp. granulated sugar
1 egg
1/4 c. water or milk
1 tbsp. cooking oil
1 c. fresh or canned, whole kernel corn

Combine dry ingredients and mix well. Combine remaining ingredients and blend into dry ingredients without overmixing. Drop by tablespoonfuls into preheated 375 degree F. vegetable shortening. Fry until golden brown, turning once. Place on paper lined baking sheet in warm oven until all are cooked. Serve with maple syrup. Yield: about 12 (2 inch) fritters.

Kitchen Cue: Make your own maple syrup by combining 2 cups brown sugar, a dash of salt and 1 cup water; bring to a boil. Reduce heat and simmer 10 minutes. Stir in a few drops of imitation maple flavoring. Thickens upon cooling.
