LINDA'S APPLE MUFFINS 
1 1/2 c. light brown sugar, firmly packed
2/3 c. vegetable oil
1 egg
1 c. sour milk or buttermilk
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
2 1/2 c. flour
1 1/2 c. diced and cored Delicious apples with peelings
1/2 c. nuts (pecans)

Combine brown sugar, vegetable oil and egg; mix thoroughly. In another bowl mix together the milk, baking soda, salt and vanilla. Add milk mixture to sugar mixture, alternating with flour. Mix well after each addition.

Fold in apples and nuts. Pour into muffin paper cups or muffin cups. Spoon on the topping mixture, which has been combined in a separate bowl. Bake at 325 degrees for 30 minutes or until toothpick inserted in center comes out clean. Makes 15-20 muffins. (Can be frozen.)

TOPPING FOR MUFFINS:

1/3 c. granulated sugar
1 tbsp. melted butter
