PINEAPPLE AND COCONUT PIE 
3 c. sugar
1/2 c. flour
1/2 tsp. salt
8 eggs, slightly beaten
2 tsp. vanilla
1 c. butter, melted
1 can crushed pineapple
2 c. coconut
2 unbaked pie shells

Mix first 3 ingredients and add to slightly beaten eggs. Beat well. Add melted butter and vanilla. Beat well. Stir in pineapple and coconut. Pour in pie shells and bake at 350 degrees about 45 minutes or until firm in center.
