SPICY STUFFED SWEET POTATOES 
4 baked sweet potatoes

Bake potatoes and let them cool for a couple of hours.

FILLING:

1 large sweet onion, chopped and caramelized
2 slices bacon, fried crispy and chopped
4 tbsp. (1/2 stick) butter, melted
1/2 cup brown sugar
1 chopped chipotle pepper and 1 tsp. juice that has been seeded
1 tbsp. cinnamon
1 tsp. smoky paprika

Preheat oven to 350°F.

Scoop out the potatoes leaving enough meat to keep the shell from falling apart. Mash the potatoes. Add remaining ingredients and mix well.

Stuff the potato skins with filling. Bake at 350°F for 45 minutes.

Serves 4.
