PECAN TOFFEE BARS 
1 c. (2 sticks) butter, softened
1 c. firmly packed light brown sugar
1 egg
1 tsp. vanilla
1 3/4 c. unsifted all-purpose flour
8 (1 oz.) squares semi-sweet chocolate
64 pecan halves or 3/4 c. finely chopped pecans

1. Preheat oven to moderate, 350 degrees. Grease 15"x10"x1" jelly roll pan.

2. Beat together butter and sugar in large mixer bowl until well mixed. Beat in egg and vanilla. Stir in flour until well blended. Spread dough evenly over bottom of prepared pan.

3. Bake in preheated moderate oven, 350 degrees for 25 minutes or until lightly browned on top.

4. While cookie crust is baking, melt chocolate in top of double boiler over hot water.

5. Remove cookie crust form oven. Spread chocolate in an even layer over top. Set pecan halves in chocolate or sprinkle chopped pecans over top. Cut into bars, about 1" x 1 3/4" while still slightly warm. Store cookies in cool place.
