MATZO BREI 
4 matzos, broken into bite-size pieces
1/4 c. cold water
4 eggs
1 tsp. salt
1/4 tsp. pepper
3 tbsp. butter
Sugar
Cinnamon
Jelly

In bowl soak matzos in water 3 minutes or until soft. Beat eggs until light and fluffy. Add matzos, salt and pepper. In skillet heat butter over medium heat. Pour in matzo mixture and cook until bottom is lightly browned. Fold over and remove to warm platter. Serve with mixture of sugar and cinnamon or jelly. This recipe makes 4 servings.
