MATZOS BALLS (Dumplings) 
2 tbsp. melted butter
1 egg, slightly beaten
1 c. matzos meal
1 c. boiling water
1 tsp. salt
1/2 tsp. chopped parsley
1/4 tsp. nutmeg
Pepper to taste

Pour boiling water over matzos meal, stir until absorbed. Add butter, then egg and seasoning. Mix well. When cool, place in refrigerator. Let stand at least 1 hour. Roll into walnut size balls. Drop into boiling chicken broth 15 minutes before serving. Boil gently, uncovered.
