PASSOVER MATZO APPLE PUDDING 
4 matzo's
4 eggs, well beaten
1/2 c. honey
1/2 tsp. cinnamon
2/3 c. raisins
2 lg. apples, cut up
1/2 c. nuts, cut up
4 tbsp. butter
1/2 c. orange juice

Break matzo into small pieces; cover with warm water. Squeeze out water. Add other ingredients. Grease 8 inch square dish; add mixture. Put a little butter, sugar, cinnamon on top. Bake 350 degrees 1 hour.
