CHOCOLATE CAKE (EGG-LESS) 
Grease a 9x12-inch cake pan with shortening.

Preheat oven to 350°F.

Measure ingredients directly into the baking pan:

3 c. cake flour
2 tsp. baking soda
1 tsp. salt
2 c. sugar
1/2 c. cocoa

Make three holes in dry ingredients and place:

2 tablespoons vinegar
2 tsp. vanilla
2/3 cup oil

Pour 2 cups water or milk over all, stir with fork, making sure to get all the corners mixed, too.

Bake at 350°F for 40 minutes or until cake tests done.

This is the best chocolate "wacky cake" I've ever tried. It took less than ten minutes to throw together, and turned out very moist without falling apart. I made a 9X9" cake and 12 cupcakes, which were done at 30 minutes.
It gets it's name from the fact that it contains no eggs, milk, or butter, and the rising agent is vinegar and baking soda. These types of cakes arose out of ingenuity during wartimes, when food rationing was in place and ingredients were hard to come by.
I'll definitely use this recipe again!

I've had and used this recipe for years. The very first time I tried it, I almost didn't! I thought "vinegar in a cake"??? Ugh! But, fortunately, I went ahead and tried it ~ because I had no eggs! Well, this turned out to be one of the best cakes I've ever made. You can't taste the vinegar. The cake is light and has a slightly different flavor from the usual normal chocolate cakes. It's a nice break from what we're used to. It's even great without frosting ~ and, to me, that says a lot for any cake. I've had many compliments and request for this recipe. It's one of those labeled "tried & true"! I bet you'll be pleasantly surprised and will keep it handy as a quick reference in the future...
