OVEN ROASTED POTATO WEDGES 
4-6 Russet baking potatoes or long, white potatoes
2 tbsp. vegetable oil
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. paprika

Pre-heat oven to 450 degrees. Leaving skins on, scrub potatoes and cut lengthwise into 1/2 inch strips.

In a small bowl, combine oil, salt, pepper, and paprika. Toss potato wedges in seasoned oil.

Place potatoes on foil-lined baking sheet and bake for about 20 minutes or until tender -- longer if you like them brown and crusty. Turn potatoes once while baking.

This is a good compromise between baked potatoes and french fries, and quick!
