PAT'S FAMILY FRUIT SALAD | |
Whipped Cream Dressing: 2 eggs 2 tbsp. all-purpose flour 2/3 cup sugar juice from canned pineapple packed in own juice (about 3/4 cup) juice from small jar maraschino cherries (about 1/4 cup) 3 tbsp. lemon juice 1/2 cup orange juice 1 1/2 pints whipping cream sugar, to taste 1 tsp. vanilla Note: Add pineapple and cherry juice together to equal 1 cup juice. Sliced Fruit Suggestions: bananas grapes maraschino cherries pineapple oranges kiwi apple Slightly beat eggs and set aside. Add sugar, flour, juices and whisk together, gradually add eggs with whisk in small sauce pan, cook over low heat until thickened into pudding consistency, cool in refrigerator overnight or several hours. Whip cream with sugar to taste and 1 teaspoon vanilla, fold in refrigerated pudding mix, add cut up fruit (your choice) to mixture. Enjoy! Submitted by: Patricia |
