FROZEN FRUIT SALAD 
This is a very old recipe. My mother has had it for over 60 years. She always made it for our family at Christmas time. If you decorate the top with maraschino cherries, it looks very festive. You can also substitute miniature marshmallow for the large ones. I usually use a whole bag of marshmallows.

2 (15 oz. ea.) cans fruit cocktail
6 or 8 tbsp. sugar
4 tsp. lemon juice
2 tbsp. all-purpose flour
2 cups whipping cream (1 pint)
24 large marshmallows, cut in pieces
1/4 cup mayonnaise
2 cups pecans, chopped

Drain syrup of fruit cocktail in medium saucepan. Add sugar, lemon juice, and flour. Cook over medium heat till thick (like pudding). Remove from heat, set aside to cool.

Whip cream till thickened and forms stiff peaks.

In separate bowl combine fruit cocktail, cooled pudding mixture, marshmallows, mayonnaise and pecans. Fold in whipping cream. Pour mixture into 9x13-inch in baking dish and then freeze. This can be frozen up to a week before serving. Thaw before serving.
