KARYN'S ZUCCHINI PARMESAN 
1 c. shredded sharp Cheddar cheese
1/2 c. cottage cheese
4 eggs, beaten
1 1/2 tsp. salt
1/4 tsp. fresh ground pepper
2 lbs. zucchini, sliced into 1/4 inch rounds
3/4 c. bread crumbs
1/4 c. Parmesan cheese
1/4 c. (1/2 stick) butter

Preheat oven to 375 degrees. Butter inside of shallow two-quart baking dish. Combine first six ingredients in bowl and mix well. Place layer of zucchini in baking dish and layer with some of cheese mixture. Repeat, ending with cheese mixture.

Combine bread crumbs and Parmesan in small bowl. Sprinkle over casserole. Dot with butter. Tent with foil and bake 25 minutes. Remove foil and bake until top is browned, about 20 minutes. Serve immediately.
