ZUCCHINI PARMESAN CASSEROLE | |
3 tbsp. oil 2 1/2 lb. sm. zucchini, wash & sliced 2/3 c. onion, sliced 1/3 c. Parmesan cheese 2 cans (16 oz.) tomato paste 1 tsp. salt 1/2 tsp. garlic (crushed or powder) 1/8 tsp. pepper 1 lb. hamburger 1/3 c. Parmesan cheese Heat oil, add (cooking over low heat until tender) zucchini, onion; remove from heat and add: Parmesan cheese (grated), tomato paste, salt, garlic and pepper. In another pan, brown and drain hamburger. Place meat in 2 quart casserole. Add zucchini mixture. Sprinkle over top 1/3 cup Parmesan. Bake at 350 degrees for 20-30 minutes. Serves 8. |
