MABEL'S MUFFINS 
1 c. Quaker oats (quick or regular)
1 c. buttermilk
1 lg. egg
1/2 tsp. baking soda
3/4 stick melted butter
1/2 c. (generous) brown sugar
1 c. flour
1 tsp. salt
1 tbsp. baking powder

Soak oats for 1 hour in buttermilk. Add beaten egg and then brown sugar. Add to oats and buttermilk mixture. Add melted butter to the batter. Do not overbeat. Place in greased muffin tins and bake at about 400 degrees for 20 minutes.
