FRUITFUL MUFFINS 
1 c. Quaker Oats (quick or old fashioned, uncooked)
1 c. all-purpose flour
1 tbsp. baking powder
1/2 tsp. cinnamon
1 c. skim milk
1/2 c. mashed ripe banana
1/2 c. raisins
1/4 c. vegetable oil
1/4 c. firmly packed brown sugar
1 egg white

Heat oven to 400 degrees F. Line 12 muffin cups. Combine oats, flour, baking powder and cinnamon. Add combined remaining ingredients; mix just until dry ingredients are moistened. Fill muffin cups 3/4 full. Bake 20 to 25 minutes or until brown.
