PEANUT BUTTER COOKIES 
1/2 c. shortening
1/2 c. peanut butter
1/2 c. granulated sugar
1/2 c. brown sugar (packed)
1 egg
1 1/4 c. Gold Medal flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt

Mix shortening, peanut butter, granulated sugar, brown sugar and egg. Blend in flour, soda, baking powder and salt. Cover and chill.

Heat oven to 375 degrees. Shape dough into 1 inch balls. Place 3 inches apart on slightly greased cookie sheet. Flatten balls in criss-cross pattern to 2 inches with a fork dipped in flour. Bake 10-12 minutes until set but not hard. 3 dozen.
