BANANA - PEANUT BUTTER COOKIES 
1 1/4 c. flour, sifted
1/2 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt
1/2 c. shortening
1/2 c. peanut butter
1/2 c. sugar
1/2 c. brown sugar
1/2 c. ripe banana, mashed

Sift together flour, baking powder, soda, and salt. Mix shortening, sugars, and peanut butter until creamy. Add mashed banana and the flour mixture. Blend well. Shape into 2 rolls on a lightly floured board. Wrap in foil and chill several hours. When ready to bake, heat oven to 375 degrees. Slice dough about 1/4 inch thick. Place on ungreased cookie sheet and bake until golden brown (about 12 minutes).

I made these with my 5 year old daughter. Of course she thinks everything is better with chocolate chips so we added them to the recipe. They were the best cookies I have tasted in quite a long time. I would recommend these to everyone. (And I don't like bananas!)
