PEACH PUFF PANCAKE 
2/3 c. water
1 c. quick baking mix
1-2 (12 oz.) can peach pie filling or other fruit
Ground cinnamon
1/4 c. butter
4 eggs

Heat oven to 400 degrees. Generously grease 13 x 9 x 2 inch pan. Heat water and butter to boiling in 2 quart saucepan. Add baking mix all at once. Stir vigorously over low heat until mixture forms a ball (about 1 minute). Remove from heat. Beat in eggs, 2 at a time, beating until smooth and glossy after each addition. Spread in pan.

Bake until puffy and dry in center 30-35 minutes. Spread pie filling over cake right out of oven. Sprinkle with cinnamon. Cut into triangles. Serve immediately. Can be served with butter and syrup for breakfast.
