MINIATURE CUPCAKES 
1 (8 oz.) pkg. cream cheese
1 egg, beaten
1/3 c. sugar
1/8 tsp. salt
1 (6 oz.) pkg. chocolate chips

BATTER:

1 1/2 c. flour
1 c. sugar
1/4 c. cocoa
1 tsp. baking soda
1 c. water
1/3 c. oil
1 tsp. vinegar
1 tsp. vanilla

Beat together cream cheese, egg, 1/3 cup sugar, and 1/8 teaspoon salt. Stir in chocolate chips and set aside. In sifter, combine flour, 1 cup sugar, cocoa and baking soda and sift in mixing bowl. Make well in center and in it place water, oil, vinegar and vanilla; beat to make smooth.

Fill miniature cupcake holders with 1 tablespoon of cocoa cup mixture, then place a teaspoon of cheese mixture on top in center of each. Bake in 350 degree oven about 20 minutes. Makes about 48 little cakes.
