APPLE DUMPLINGS - 1700 Book 
2 1/4 c. all-purpose flour
2/3 c. shortening, chilled
6 sm. apples, peeled & cored
2/3 c. sugar
1/4 c. light cream
3/4 c. maple sugar, heated

Combine flour and 1/2 teaspoon salt. Cut in shortening. Sprinkle 6-8 tablespoons "cold water" a little at a time with fork. Form into ball, roll out on floured surface, 18 x 12 inch rectangle, cut into 6, 6 inch squares. Place 1 apple in each.

Combine sugar and cream. Spoon into apple centers. Fold up corners of pastry. Place in 11 x 7 1/2 x 1 1/2 inch baking pan. Bake at 450 degrees for 15 minutes. Reduce to 350 degrees for 30 minutes. Baste pastry 2 times, hot syrup.
