APPLE DUMPLINGS IN A PAN | |
6 tart apples (med. to lg.) 2 c. flour 1/4 tsp. salt 2 tbsp. shortening 4 tsp. baking powder Milk 1 c. sugar 2 tbsp. cinnamon 1/2 c. firmly packed brown sugar 1 c. water Butter Pare and cut apples into small pieces. Set them aside in salty water so they won't yellow. Make a pastry of flour, baking powder, salt and shortening, adding as much milk as needed. Roll pastry to 16x16 inch. Drain apples. Combine sugar, cinnamon, brown sugar and water. Add this liquid to apples, stirring to coat all the fruit. Drain, reserving liquid. Place all apples on pastry. Lift up all sides of pastry, covering the apples and forming a roll. Slice as you would a loaf of bread, making each slice 1 to 1 1/2 inch thick. Carefully lift each slice into a greased 13x9 pan. The pieces will not stay in neat slices, but should be placed side by side and evenly distributed. Pour remaining liquid over apples and pastry. Bake in 350 oven about 40 minutes or until crust and apples are cooked. Serve hot or cold. |
