GERMAN POTATO PANCAKES 
3 raw potatoes, grated
2 beaten eggs
1/4 tsp. baking powder
1/8 tsp. pepper
1/2 - 1 c. grated onion (to taste)
2 tbsp. flour
1 1/2 tsp. salt

Peel and grate potatoes, drain off excess liquid that collects. Mix flour, baking powder, salt and pepper. Add to potatoes along with eggs. If batter is too thin, add a little more flour. Drop by tablespoon or 2 into 1/4" deep hot fat in heavy skillet. Cook over medium heat until golden brown. Turn over and brown other side. Drain on paper towels.

The pancake mix should be doubled and the size of pancakes should be 1/4" thick and the size should be app. 8" circular! The best bet is mum's recipe use a Braun Juicer to obtain the potato pulp!

I had German potato pancakes at a German friend's house and they were sooo good. She basically used the recipe here, but added some quick cooked oats (try about a tbsp.). She is 70 yrs old and learned this from her mom.
