MASHED POTATO PANCAKES 
1 egg, well beaten
2 c. cold mashed potatoes
1 tbsp. minced onion
1/2 tsp. salt
1 tsp. minced parsley
3 tbsp. shortening, butter

Blend the egg with the potatoes, then add the onion, salt and parsley. Drop by spoon into a frying pan containing sizzling hot fat. Brown each croquette or patty on one side, turn and brown the other side.
