AUNT KATE'S APPLESAUCE CRUMB CAKE | |
1 1/2 cups unbleached flour 1 teaspoon baking powder 1/2 teaspoon salt 3 tablespoons butter 1 cup sugar (or brown sugar) 1 egg, well beaten 2 cups applesauce 1 teaspoon cinnamon Preheat oven to 350°F. Grease 8X8-inch pan. Combine flour, baking powder, salt and sugar. Cut in butter with pastry blender until crumbly. Add egg, beating well. Press half the mixture into the bottom of a lightly greased 8-inch square baking pan. Cover crumbs with applesauce (or any fresh, juicy fruit i.e. sliced peaches) and top with remaining crumb mixture, spreading evenly. Sprinkle top with cinnamon.
