AUNT KATE'S APPLESAUCE CRUMB
CAKE
 
1 1/2 cups unbleached flour
1 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons butter
1 cup sugar (or brown sugar)
1 egg, well beaten
2 cups applesauce
1 teaspoon cinnamon

Preheat oven to 350°F. Grease 8X8-inch pan.

Combine flour, baking powder, salt and sugar. Cut in butter with pastry blender until crumbly. Add egg, beating well. Press half the mixture into the bottom of a lightly greased 8-inch square baking pan.

Cover crumbs with applesauce (or any fresh, juicy fruit i.e. sliced peaches) and top with remaining crumb mixture, spreading evenly. Sprinkle top with cinnamon.

Bake in moderate oven until golden brown, about 40 minutes.
