JEAN'S TAGINE | |
1/4 c. olive oil 1 lg. onion or scallions, sliced 1 tbsp. parsley 1 clove garlic, mashed 1/3 c. green olives 1 lemon, cut in wedges 1 tbsp. coriander 1 tsp. salt Ground black pepper, to taste 1/8 tsp. saffron 1 cut up chicken, skin off Place oil in a large pot on stove. Add all ingredients except olives. Stir to coat with flavors. Cover and simmer for about an hour, stirring occasionally. When done, stir in olives. Just heat for a few more minutes. Serves 4-6. Serve on a platter of rice with salad, pita bread, and mint tea for a delightful Moroccan dinner. |
