TOMATO SALSA 
1 (28 oz.) can diced tomatoes (Hunts)
2 or 3 chopped scallions
1/2 cup chopped cilantro (fresh coriander)
1 or 2 tsp. garlic
1 tsp. minced jalapeno pepper, or to taste
2 tsp. fresh lime juice
1/2 cup vinegar (any type)
1/2 tsp. ground cumin
salt and freshly ground black pepper, to taste
1 pkt. Splenda (or other sugar substitute)

Pour all ingredients into mixer and blend until you get to the consistency you desire.

Serve with your favorite tortilla corn chips.
