GREEN TOMATO SALSA 
4 c. chopped green tomatoes
2 c. chopped and seeded sweet peppers (banana, red bell)
1 c. chopped and seeded jalapenos, approximately 1/2 pound = 1 cup chopped
1 c. chopped onion
2 tsp. salt
1 1/2 c. cider vinegar
3 cloves crushed garlic

Chop all ingredients and place in saucepan. Bring to a boil, reduce heat and simmer for 10 minutes. Pour salsa in hot jars (pints). Seal and water bath for 30 minutes.

Makes about 5 pints.

Very good and easy to do. I am still new to canning so that is still the challenging part for me but aside from that this was easy to do. I didn't chop the tomatoes or peppers small enough and I didn't like the big chunk look, so I put small batches in my blender and pulsed them down a bit. I also used cayenne peppers and serrano peppers because they had been in my fridge for a while and I had to do something with them. So, this is a very spicy salsa but very good! I ended up with 5 1/2 pint jars.
