MEXICAN WEDDING CAKES 
1 c. butter (soft)
1 tsp. vanilla
2 1/4 c. flour (sifted)
1/2 c. powdered sugar (sifted)
3/4 c. nuts (very finely chopped)

Thoroughly mix butter, sugar and vanilla. Gradually stir in flour. Add nuts. Chill dough at least one hour. Roll into balls the size of small walnuts. Place on ungreased cookie sheet. Bake at 400 degrees F. until set but not brown, about 10 minutes. While still hot, roll in powdered sugar. Cool. Roll in powdered sugar again. If stored very long, roll in powdered sugar again before serving.
