MICROWAVE DOUBLE CHEESE AND
CAULIFLOWER SOUP
 
1 sm. head cauliflower, broken into sm. florets, 4 c.
2 c. water
1 (8 oz.) pkg. cream cheese
1 (5 oz.) jar sharp American cheese spread
1/2 of 2 1/2 oz. jar dried beef, rinsed and chopped
1/2 c. potato flakes or buds

In large non-metal mixing bowl, combine cauliflower and 1/2 cup of water. Microwave, covered, on HIGH for 8 minutes, stirring once. Remove from oven; set aside. Do not drain. In 2 quart non-metal casserole combine the cream cheese (cut up) and cheese spread, beef, potato flakes, and the remaining water. Cook, uncovered, for 10-12 minutes or until mixture is smooth and cheese are melted, stirring once. Stir until well blended. Stir in the undrained cauliflower. Cook 2-3 minutes more. Makes 4 main dish servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
