This is wonderful served with baked ham and scalloped potatoes for a buffet dinner.

1 sm. can Ortega chilies (green roasted, seeds removed)
1 lb. sharp cheddar cheese (grated 4 cups)
1 lb. Jack cheese, grated (4 cups)
4 eggs, beaten together
1 sm. can (5 oz.) evaporated milk

Layer in casserole, cheese, chilies, then cheeses. Pour egg and milk mixture over all. Bake at 350 degrees for about 30 to 40 minutes until set and lightly browned. Cut in squares.
