KAO-PAI-KU (SPARERIB BARBECUE SAUCE) | |
1/4 c. soy sauce 2 tbsp. honey 2 tbsp. hoisin sauce 2 tbsp. white vinegar 1 tbsp. Chinese rice wine or dry sherry 1 tsp. finely chopped garlic 1 tsp. sugar 2 tbsp. chicken stock Canned plum sauce (optional) In small bowl combine all but plum sauce. Pour over spareribs and let set 3 hours at room temperature or 6 hours when refrigerated. To cook in oven preheat oven to 375 degrees. Place in roasting pan. To prevent smoke in oven place another large pan with water on lower rack, roast ribs for 45 minutes then raise temperature to 450 degrees for 15 minutes more. Serve with plum sauce hot or cold. |
