CHOCOLATE ZUCCHINI BREAD 
2 eggs
2/3 c. oil
2 c. sugar
2 c. zucchini, shredded
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1/2 c. powdered cocoa
1 1/2 c. nuts, chopped (optional)

Beat together the first 3 ingredients. Add zucchini and vanilla. Sift dry ingredients together and add. Add nuts. Pour into two small greased and floured loaf pans for bread, or into one regular sized bundt pan for cake. Bake at 325 degrees for one hour.
