SPINACH PIE 
1 can drained spinach or 1 pkg. frozen (drained)
3 eggs
1 c. ricotta cheese
2 tbsp. butter
1/2 tsp. salt
1/4 c. Parmesan cheese

Crust:
1 c. cooked rice
1 c. grated cheese
1 egg

Mix the crust in the pie dish and spread with fingers. Mix all the other ingredients and pour into crust. Sprinkle with nutmeg. Bake in 350 degree oven for 30 to 35 minutes. It is done when knife comes out clean.
