SPINACH PIE 
2 pkgs. frozen chopped spinach, cooked and drained very well
1 sm. container ricotta cheese (1 lb.)
1 rounded tablespoon grated Parmesan cheese
1 egg
Salt and pepper
8 to 10 slices Muenster cheese

Mix spinach, ricotta, grated cheese, egg, salt and pepper. Line 9 inch pie dish with Muenster cheese so corners of cheese hang over edge of dish (1 slice in bottom).

Put spinach mixture in dish and flip cheese over top of spinach. 1 slice of cheese in center of top. Bake at 350 degrees for 1/2 hour. Let cool on rack for 10 minutes before cutting.
